Four easy meals to try this week

Life has been pretty quiet lately, dog walks and cooking take up my time and tbh, that makes me pretty happy. So here’s four easy meals that I’ve made lately that I reccomend you try your hand at!

Turkey mince koftas

Taken from the recipe book Hob by Amy Shepherd, this kofta kebab recipe is super easy and you can save them in the fridge for later. Serve with salad, rice, pittas, the choice is yours!

Veggie burrito bowl

An oldie but a goodie. If you’re stuck on what to make for dinner, have a root through your cupboards and the fridge and see if you’ve got the ingredients for a burrito bowl. You make this veggie or meat and its packed with rice, salad, homemade guacamole, sour cream, fajita roasted veg and a sprinkling of grated cheese. Delicious!

Veggie moussaka

I love eating Greek food and I love cooking it too. A veggie moussaka keeps us going for days and during the heatwave is was perfect with a huge salad with loads of feta.

This recipe was taken from Mob Veggie, my current go-to cool book. Delicious!

Spaghetti carbonara

After various attempts, I’ve absolutely smashed making carbonara from scratch. All you need is two eggs, creme fraiche, bacon lardons, spaghetti, parmesan and a healthy dollop of black pepper.

It’s such an easy dinner to rustle up and hits the spot every single time!
