I’m back with another recipe post. It’s been a while since I’ve shared new recipes, but in all honesty during December I didn’t try too many new recipes but January calls for healthier eating and new meal ideas!
Marinated salmon
I used to buy pre-marinated salmon but I’ve invested in a few new recipe books, including Pinch of Nom, so I’ve started to make my own.
To make the marinade:
- Soy sauce
- Garlic paste
- Ginger granules
- Honey
- Chilli flakes
- Tomato puree
Veggie fried rice
This is so easy to make and a great staple at the heart of a veggie fakeaway meal or a healthy stir fry meal!
I boil wholegrain grain in one pan with tenderstem broccoli and stir fry chopped red onion, mushrooms and chopped pepper with frylite in Chinese 5 spice seasoning.
My hack is to use a frozen bag of peas, sweetcorn and broad beans to up the veg count and save on buying fresh.
