5 days, 5 healthy meal ideas 

Since the start of the year I’ve been following the Slimming World plan, on and off. It works well for me as I don’t feel restricted and can still enjoy naughty meals such as curries and chilli without the added badness.

After a couple of months over my birthday where I’ve massively indulged, I’m back on track and really enjoying planning meals from scratch and finding new ingredients to try. So, give myself a push and keep healthy eaters motivated, I thought I’d share 5 of my much-loved weekly meals, that don’t take forever to make.

First up is chilli with boiled rice and avocado. I love avocado. I must eat it daily and love trying to incorporate it into new meals. I often make quorn chilli as it’s a nice change from mince meat.

Next up is my weekend treat – chicken kebabs without any naughty sysn sneaked onto the side. Marinated chicken, avocado, feta cheese and a wholemeal pitta. Delicious, right? I tend to make this on a Friday night when I’m craving a takeaway but don’t want to break the spell of eating well. It’s so filling and packed with flavour, you can’t go wrong!
  Last week I tried something new, which I wasn’t too sure about. Luckily the gamble paid off with stuffed aubergine skins filled with a quorn and aubergine chilli. Oh and topped with my favourite cheese, feta and spinach. These were amazing, so tasty and the different flavours worked really well together. Next time, I think I’ll add some homemade tzatiki  on the side.

Another day, another batch of kebabs. This time loaded with roasted sweet potato and butternut squash. I incorporated a the veggies alongside some BBQ seasoned chicken and my old faithfuls – feta and avocado. I mean, why would I stray away from what I love!?

Lastly, something a bit different. I’ve actually blogged this recipe before – peanut butter chicken noodles here. It’s amazing. I spotted this on the Lean in 15 Instagram guy who seems to taking the internet by storm and I love it. The noodles work so well with the peanut butter and if you chuck some baby corn and sugarsnap peas in too, you’ve got a yummy meal on your hands that takes no time at all to prep!
